I'm not seeing the option to impress. The only option I have is the son of a farmer who has killed a few rats. What sorts of things should I be able to impress them with?

Which quest are you referring to, and what level are you?

Got to the Radiant Guardian for the Trial by Fire quest and the guy won't let me fight him... What am I doing wrong?

"Trial by Fire" is a quest at the Charwood area, while the quest in which the RG is involved is "An involuntary carrier".
I think you mean the second one. You must talk to the RG first. Did you have the option to do so? If not, you must

v0.7.1 is a bugfix release, and has the same contents as v0.7.0.
Most sticky threads are up to date I believe.

For the quest count, depending on the choices you made, your max count can vary. You cannot however, complete ALL quests, because some are mutually exclusive (choice in quest A will give access to either quest B or quest C, but never both).

Only two quests cannot be completed. Search for andor and Lost Treasures. And if you kill Algangror you do not even get the chance to start Five idols as she is the one that gives you the quest. Don't feel bad took me five tries before I didn't kill her.
