What's that number?

When I'm consuming meat, a blue number (either 2 or 3 depending on the meat's provenance) appears on my character when the HPs are applied.
When I'm fighting I often see a blue number appear on my opponent, it's usually 4,7, or 10: I can't reconcile it with anything in the combat log.
When I use Xulvir the number on my opponent is brown - *Bleeding Wounds* inflicted presumably, but again I can see no correlation between the number that appears on my opponent in combat and the figures in the combat log.
