You won't need gold soon enough (meaning you'll have more than you can spend), so even though there isn't a need for them yet I wouldn't sell them. Who knows what you'll need for Heartsteel...

This game is still on progress (beta6.10). As Chest_Rockfield says, Nowadays there are no use, but perhaps in future... This game chanced a lot betveen updates.

I settle for carrying 100 of each useless item, from rat tails to ruby gems, and selling off everything above that. Having said that, it'll turn out that we need 101 sharpened gems for something in the future.

I used to only keep 100 of some things and 1,000 of other more commonly/easily obtained things. But once money no longer became an issue, I only sell things I can't possibly imagine needing. The only things I sell are my meat down to 1k, reg potion to 1k, and the 5 items I get in the Iqhan Cave (because let's face it, until the next update I will be getting thousands more of each).

I also sold all my rocks after the last update, it was nice seeing them actually worth 1 gold (better than 0), but that was mostly to restart my counter for the Gargoyle T&Ms after using some skill points on Magic Finder.

I too lost rocks at the update. In my case it was due to starting a new character though. 
As for items, considering the fact I have no idea what is going to be needed later, I'm not risking selling everything (even if I do restart more often than may be healthy).
