Is it worth it the 5% chance or take the helmet?

Well, the blessing is the only one protecting from all status ailments.
And you can't learn it otherwise.
To get a similar effect you have to spend 3 skill points. (Then it will be 10%)
For this early in game it's a good compromise for destroying the helmet.

On the other hand the dark protector is one of the strongest headgear in this version.
But you have to take its side effects too.

Side effects aren't too obvious all I can see that's bad is -6 HP but that's not too important in the grand scheme of things.

How does this blessing work? For example, if enemy can bleed you for a 20% chance, does the blessing reduces the chance to 20%-5% =15%, or 20%-20%*5% = 20%-1% = 19%?

It looks like it's a solid 5 points, so, in your example, the resulting chance is 15%.
There's one special case though: if the base chance is 100%, then it cannot be altered.

Perhaps there will be some quest related stuff or mind changing properties that will happen to you in future updates when not destroying the helmet and/or the sword :?

True... maybe it's better to just keep Ulirfendor alive and keep the helmet, then... until the game is complete.
It's not like if you really needed the blessing to be able to kill everyone at level 45+ anyway. I can kill mobs without being touched most times.

There are really three options:
Restore the helmet. Get 5000XP
Destroy the helmet, get the blessing. Get 15000XP
Destroy the helmet, decline the blessing. Get 35000XP

For me the dark blessing seemed underpowered. Maybe it should just halve the chance of getting status ailments on hits? So instead of 10% you get 5%, instead of 20% it's 10% and so on?

I think that probably getting the helmet is slightly better. When I was choosing it I have had over 100 hp so its negative effect was negligible. Though I did choose to destroy it currently because I didn't want to kill Ulirfendor. Maybe there should be a way to get the helmet, but keep him alive?
