Option to leave opponent alive
This thought just popped up in my head: Wouldn't it be nice to be able to defeat your opponent but not to kill him? It would make sense with animals (the survey mentioned fleeing) to leave them wounded if you choose to. Magical creatures like the ones on BWM or in the swamps might always fight till death. But what about humans? Some must be killed because they would organize revenge or alert their commanders, but sometimes defeat does not need to mean to kill. For example the highwayman could just surrender. This would also give way to more story elements: Some deafeated opponents will try to fight back the next time, others might hire killers to hunt you and others just flee. This feature might need a fighting option to strike non-lethal blows at your enemy. Otherwise a critical hit would kill the old bugger before he has a chance to lay down his weapons.

+1 it could be useful for quests where you can fight a npc but should not kill him.
Maybe the npc could start a dialogue when you struck him with the final blow.
NPC: I yield!
Player: (1) Give me all your money and items and you're free to go.
Player: (2) Here have a potion to feel better and then leave.
Player: (3) I accept your surrender, now leave.
Player: (4) Die you fool!
Chivalry Pyro, do you know what it is?

I think this is an interesting idea and definitely could add to some story lines.

Yeah, you could be trying to kill the thieves from the Crossroads Guard House, and then after you have them at 20 hp, they yield and tell you their side of the story. Evens out the game, if you support the Shadow, you would still have to fight them first. +1.
