Also I noticed that after Rennik informed me that Defy and his men were being held in the jail cell of the Guild, I went to see them and nobody is in there. Does that mean they've escaped?

I have always been able to get back down to the jail that lady was kept in after the quest was done. Ill go back again in a little while and take an SS to show you but right now I'm doing the climbing up is forbidden and discovered a color marker again:
